Effect of light debranning and screening processes on the physicochemical and hygienic quality of wheat
In order to explore the cleaning effect of light debranning and screening processes on wheat grains, based on the actual production workshop of a flour mill,a two double-axial debranners corresponding to the light debranning process and a TAS cleaning machine corre-sponding to the screening process were selected to clean the heavy wheat separated by a gravity grading destoners.By measuring the ash content, crude protein, deoxynivalenol content, and ar-abinoxylan content of wheat, the effects of light debranning and screening treatment on the phys-icochemical quality of wheat were analyzed. The experimental results show that light debranning and screening treatment can effectively improve the physicochemical and hygienic quality of wheat. The ash content of wheat is reduced by 0.03%,the arabinoxylan content is reduced by 0.04%,the bulk density is increased by 15 g/L,and the content of deoxynivalenol is reduced by 32.6%.At the same time, light debranning treatment has no significant effect on the crude pro-tein content of wheat(P>0.05).
