摘要
谷物中含有丰富的膳食纤维、维生素和矿物质等成分,决定了谷物具有降低胆固醇、提供能量、抗氧化和抗疲劳等功能特性.以谷物为原料经多种不同加工方式制成的植物饮料,以其功能优势受到人们的重视.本文从谷物性植物饮料的类型、营养价值、功能特性及加工工艺等方面进行论述,并对我国谷物性植物饮料的发展进行展望.
Abstract
Cereals are rich in dietary fiber,vitamins,and minerals,which determine their functional properties such as lowering cholesterol,providing energy,antioxidant,and fatigue re-sistance.Plant based beverages made from grains through various processing methods have re-ceived attention due to their functional advantages.The article discusses the types,nutritional value,functional characteristics,and processing technology of grain based plant-based bevera-ges,and looks forward to the development of grain based plant-based beverages in China.
