摘要
干燥是保证粉丝品质的重要手段,快速有效的干燥方法能够使粉丝成型后迅速脱水干燥、并保持良好的品质及较长的保质期.本文对近年来粉丝干燥研究现状和发展趋势进行综述,以期为相关研究提供参考.
Abstract
Drying is an important means to ensure the quality of vermicelli.The fast and ef-fective drying method can quickly dehydrate and dry the vermicelli after molding,and maintain good quality and long shelf life.This paper reviews the current research status and development trend of vermicelli drying,and provides reference for related research.
