不同储藏条件对橄榄油品质变化影响的研究

对橄榄油在五种不同储藏条件下的酸值、过氧化值和角鲨烯含量的变化规律进行研究。结果显示:开盖室温自然光条件下,过氧化值和角鲨烯含量的变化趋势最为明显,酸值的变化趋势不明显;角鲨烯含量对橄榄油过氧化值有较大的影响。
Study on the effect of different storage conditions on the quality of olive oil
The changes of acid value,peroxide value and content of squalene of olive oil in five difference storage conditions were studied. The results showed that:Opened at room temeperature, under the condition of natural light,peroxide value and content of squalene changed obviously,acid value trend was not pronounced. Squalene content had large effects on the peroxide value of olive oil.
