摘要

对GABA的合成路径、非热物理技术富集GABA的机理及其应用进行简要概括,并且探讨了非热物理技术在加工过程中对食品特性的影响,旨在为植物富集GABA新技术研究和富含GABA的新型食品开发提供理论参考和创新思路.

Abstract

The synthesis pathway of GABA,the mechanism of GABA enrichment by non-thermal physi-cal technology and its application were briefly summarized,and the effects of non-thermophysical technol-ogy on food properties during processing were discussed,aiming to provide theoretical references and in-novative ideas for the research of new technology of GABA enrichment in plants and the development of new GABA-rich foods.
