摘要
综述了超声波、磁场、高压静电场、脉冲电场、射频、微波等物理解冻技术的基本原理以及在肉类及其制品解冻中的应用研究现状,以期为物理解冻技术在肉类及其制品领域的开发及工业化应用提供理论参考.
Abstract
The basic principles and current application status of physical thawing technologies such as ultrasonic,magnetic field,high-voltage electrostatic field,pulsed electric field,radio frequency,and mi-crowave in the thawing of meat and its products were reviewed,in order to provide theoretical reference for the development and industrial application of physical thawing technology in the field of meat and its products.
