In order to explore the regulatory effect of wheat bran soluble dietary fiber(WBSDF)on in-testinal flora,WBSDF noodles were prepared by adding different amounts of WBSDF to wheat flour,which were subjected to in vitro dynamic gastrointestinal digestion and in vitro fermentation.The pH and short-chain fatty acids(SCFAs)content of the fermentation broth were determined,and Miseq high-throughput sequencing analysis was performed.The results showed that WBSDF in noodles could signifi-cantly reduce the pH of the fermentation broth(P<0.05)and produce a large amount of SCFAs.Com-pared with the group without WBSDF,the addition of WBSDF could reduce the diversity of intestinal flo-ra and change the structure of intestinal flora.At the phylum level,the addition of WBSDF could signifi-cantly reduce the relative abundance of Firmicutes and Actinobacteriota(P<0.05),and significantly in-crease the relative abundance of Bacteroidota and Proteobacteria(P<0.05).At the genus level,the ad-dition of WBSDF could significantly increase the relative abundance of intestinal beneficial bacteria(P<0.05)and reduce the relative abundance of harmful bacteria(P<0.05).Overall,WBSDF noodles could effectively regulate the structure of intestinal flora and maintain intestinal health.
