Application and research progress of chitosan preservation technology in fruit preservation
As a natural,green and biodegradable material,the application of chitosan in fruit preservation has attracted more and more attention.This article reviewed the progress of chitosan preservation technology in fruit preservation.The characteristics of chitosan and the application prin-ciple and mechanism in fruit preservation were presented,and then the application of chitosan pres-ervation technology in fruits was introduced in detail.This paper discussed the future development direction of chitosan preservation technology.
