养殖草鱼不同部位肌肉的营养成分分析与评价

An Analysis and Evaluation of Nutritional Components in Muscle of Different Parts of Cultured Grass Carp Ctenopharyngodon idella

采用国家标准生化测定方法对草鱼背部、腹部和尾部肌肉的水分、灰分、蛋白质、脂肪、氨基酸、脂肪酸和矿物质进行检测,以比较草鱼不同部位肌肉营养成分差异,系统分析和评价草鱼不同部位肌肉的营养价值.结果表明,草鱼背肌的水分、灰分和蛋白质含量较高,腹肌的脂肪含量较高;肌肉中蛋白质质量较优、氨基酸比例均衡,肌肉共检出18种氨基酸,其中背肌的氨基酸总量高于腹肌和尾肌;共检出23种脂肪酸,不饱和脂肪酸(UFA)含量较高,其中油酸含量最高;矿物质元素丰富,共检出10种矿物质元素,常量元素中K含量最高,微量元素中Zn含量最高.
The moisture,ash,protein,fat,amino acids,fatty acids and minerals in different parts muscles of Ctenopharyngodon idella were detected by the National Standard biochemical assay method.To compare the nutritional components of the dorsal,abdominal and tail muscles of C.idella,and systematically analyze and evaluate the nutritional values of the different parts muscles.The results indicate that,the content of moisture,ash and protein in dorsal muscle and the content of fat in abdominal muscle of C.idella were higher.C.idella muscle has excellent protein quality,balanced proportion of amino acids,a total of 18 kinds of amino acids were detected.The total amount of amino acids in dorsal muscles were higher than those in abdominal and tail muscles.A total of 23 kinds of fatty acids were detected,the content of unsaturated fatty acids(UFA)was higher,the content of oleic acid in fatty acids was the highest.A total of 10 kinds of minerals were detected,the content of major element K in mineral elements and the content of Zn in trace elements were the highest.
