Study on Clarification Effect of Different Clarifiers on Ponkan Wine
Using chitosan,gelatin and egg white liquid,AGAR and chitosan,gelatin compound clarifying agent to clarify the ponkan base liquor fermentation.Measuring the absorbance value and light transmittance of ponkan wine,and observing the change of precipitation and ponkan wine color.The results show that 5 kinds of clarifying agent to clarify effect order merits:chitosan>AGAR>chitosan-gelatin compound clarifying agent>gelatin>egg whites.The best way to clarify is adding 4% chitosan solution (1%) into ponkan wine,the light transmittance is arriving 96%,the formation of precipitation is relatively tight,the ponkan wine is bright and gold.
