Research Progress on Production of Ethoin by Fermentation of Cordyceps Residue
Acetoin is an important chemical synthesis intermediate and multi-functional material,widely used in food,tobac-co,pharmaceutical,chemical,wine and other fields.The traditional method of producing acetoin is mainly chemical.With the expansion of the application range of acetoin and the shortage of production,the traditional method has gradually failed to meet the market demand,and the microbial transformation to produce acetoin has the advantages of high efficiency,low pol-lution and other green development,and meets the edible safety requirements of natural flavors.Cordyceps sinensis is a tradi-tional and precious medicinal material in China,which is widely used in food and medicine.However,a large amount of cordyceps residue can be produced in the actual process production,and the glucose content in the cordyceps residue is about 7.11%~7.51%,which is in great need of further degradation and utilization to play a greater value.The fermentation solution of cordyceps sinensis residue containing ethoin by microbial conversion was beneficial to expand the application field of cordyceps sinensis residue,further improve the value of cordyceps sinensis residue,and gave cordyceps sinensis residue related prod-ucts with unique milk sweet aroma and flavor characteristics.
