研究一种补气养血鹿胶饮料的配方及制备工艺.采用经过熬制的鹿皮胶为原料,配以红枣、枸杞、生姜等辅料制备一种富含多种营养物质的饮料.通过正交试验优选出最佳配方,经过洗净、脱核、打浆、浸提,过滤,在混合果汁中加入一定比例用温水溶解的冰糖蜂蜜和烊化的鹿皮胶溶液,搅拌均匀再进行均质、灭菌、灌装,即制成鹿胶饮料.所得鹿胶饮料具有形态稳定均一、口感清爽、酸甜可口、颜色鲜亮均一、香味柔和、食用方便等特点.
Preparation of a Kind of Deer Gum Beverage for Replenishing Qi and Nourishing Blood
The formula and preparation technology of a kind of deer gum beverage for replenishing qi and nourishing blood were studied.In this paper,deerskin gum was used as raw material to prepare a kind of beverage rich in many kinds of nutri-ents,such as red jujube,Chinese wolfberry,ginger and so on.The best formula was selected by orthogonal test,and the deerskin beverage was made by washing,enucleating,beating,extraction,filtration and adding a certain proportion of ice sugar honey and deerskin gum solution dissolved in warm water to the mixed fruit juice,stirring evenly,then homogenizing,sterilizing and filling.The obtained deer gum beverage had the advantages of stable and uniform shape,refreshing taste,sweet and sour taste,bright and uniform color,soft flavor and convenient consumption.
