In this study, soluble dietary fiber(SDF)was extracted from Holothuria scabra using an enzymatic hydrolysis method with cellulase. The optimal extraction conditions were determined through single-factor and orthogonal experiments. The physicochemical properties of the extracted SDF were also investigated. The results showed that the highest extraction yield(88.2%)were achieved under the following conditions:initial pH 6.0,liquid-to-solid ratio 1:25,temperature 45 ℃,en-zymatic hydrolysis time 3 h,and enzyme addition at 15%,the extraction volume reached 88.2%.The color of the extracted SDF was off-white.Furthermore,the water holding capacity, oil holding capacity, and solubility of the SDF from Holothuria scabra were found to be(4.743 0±0.148 7)g/g,(1.480 0±0.009 2)g/g,and(84.40±0.56)%,respectively.These findings demonstrated that soluble dietary fiber derived from Holothuria scabra exhibits favorable physicochemical functional characteristics which could contribute to its high-value utilization in various applications.
