Extraction and Physicochemical Characterization of Soluble Dietary Fiber from Holothuria scabra
In this study,soluble dietary fiber(SDF)was extracted from Holothuria scabra using an enzymatic hydrolysis method with cellulase.The optimal extraction conditions were determined through single-factor and orthogonal experiments.The physicochemical properties of the extracted SDF were also investigated.The results showed that the highest extraction yield(88.2%)were achieved under the following conditions:initial pH 6.0,liquid-to-solid ratio 1:25,temperature 45 ℃,en-zymatic hydrolysis time 3 h,and enzyme addition at 15%,the extraction volume reached 88.2%.The color of the extracted SDF was off-white.Furthermore,the water holding capacity,oil holding capacity,and solubility of the SDF from Holothuria scabra were found to be(4.743 0±0.148 7)g/g,(1.480 0±0.009 2)g/g,and(84.40±0.56)%,respectively.These findings demonstrated that soluble dietary fiber derived from Holothuria scabra exhibits favorable physicochemical functional characteristics which could contribute to its high-value utilization in various applications.
