Comparison of Antioxidant Capacity of Different Jujube Varieties
In order to compare the antioxidant capacity of different jujube varieties,the water content,edible rate,total sugar content,total phenol content,reducing ability and free radical scavenging ability of different jujube varieties were determined.The results showed that the overall antioxidant capacity of Huizao was higher,followed by Banzao,and the antioxidant capacity of Changhongzao and Yuanlingzao was lower.
