摘要

近年来,随着工业发展引起的环境污染和饮食结构的变化,消费者对食品毒素的关注度不断提升.作为一类有益于人体健康的微生物,益生菌在食品毒素清除方面具备潜在的应用价值.对食品中常见的毒素种类进行了梳理,重点总结了益生菌清除食品毒素的方式和机制.益生菌主要通过细胞内摄取、表面吸附、生物转化及与其代谢产物发生相互作用等方式实现对食品毒素的清除.为深入研究益生菌对食品毒素的清除作用提供参考,并为益生菌在食品工业中的应用奠定理论基础.

Abstract

In recent years,concern about food toxins has been increasing among consumers because of the environmental pol-lution caused by industrial development and changes in dietary structure.As a health-benefit microorganism,probiotics have potential application value in food toxin removal.In this review,the common types of toxins in food were summarized,with a focus on the mechanisms by which probiotics could be used to remove toxins from food.Probiotics could remove food toxins through their cellular uptake,surface adsorption,biotransformation and interaction with their metabolites.It provided reference for in-depth research on the removal of food toxins by probiotics and laid a theoretical foundation for the application of probi-otics in the food industry.
