浅议预制菜产业技术风险分析与对策

随着消费理念的转变,预制菜成为消费者和食品工作者的关注热点,其产业规模也得到了空前发展.由于预制菜肴的行业发展速度过快,造成预制菜肴的相关概念模糊、生产技术和加工设备的落后及食品安全隐患突出.研究分析了预制菜肴的历史进程及其未来的发展方向,并对预制菜肴从原料筛选到产品流通,从烹饪熟化到复热食用的加工链中存在的风险进行了剖解分析,提出了相应解决方案,为预制菜产业健康发展和强力技术支持提供依据和参考.
Analysis and Countermeasures of Technical Risks in the Premade Cuisines Industry
With the change in consumption concept,premade cuisines have become the focus of consumers and food workers,and its industrial scale has also been unprecedentedly developed.The rapid development of the premade cuisines industry has resulted in the blurring of concepts related to premade cuisines,the backwardness of production technology and processing equipment,and the prominence of food safety hazards.This paper analysed the history of premade cuisines and their future development direction,and analysed the risks involved in the processing chain of premade cuisines.Hopefully,this paper would provide a basis and reference for the healthy development and strong technical support of the premade cuisines industry.
