With the change in consumption concept,premade cuisines have become the focus of consumers and food workers,and its industrial scale has also been unprecedentedly developed.The rapid development of the premade cuisines industry has resulted in the blurring of concepts related to premade cuisines,the backwardness of production technology and processing equipment,and the prominence of food safety hazards.This paper analysed the history of premade cuisines and their future development direction,and analysed the risks involved in the processing chain of premade cuisines.Hopefully,this paper would provide a basis and reference for the healthy development and strong technical support of the premade cuisines industry.
