混合式教学是新工科背景下立足教和学特点,融合线上线下资源,提升教学质量的有效手段.针对目前食品工程专业存在的学生机械专业知识储备薄弱、制备原理及工艺难理解、实验设备短缺、实验场地不足等问题,结合虚拟仿真技术直观、安全、交互性强等优势,将其引入课程混合教学中,探索提高教学质量的有效途径.以食品工程专业为例,首先,阐述虚拟仿真技术在其混合式教学中的应用现状;其次,设计虚拟仿真技术在食品工程专业中应用的思路方案;再次,以啤酒酿造为例,说明虚拟仿真技术的应用过程;最后,分析应用成效并思考后续的改进措施.开展虚拟仿真技术在食品工程专业混合式教学中的应用探索,旨在激发学生的积极性和创新性,提高课程吸引力和参与度,进而提升教和学的质量.
Exploration Application and Exploration on Virtual Simulation Technology in the Mixed Teaching Reform of Food Engineering
Blended teaching is an effective means to improve teaching quality by integrating online and offline resources based on the characteristics of teaching and learning in the context of new engineering.In view of the problems existing in the current food engineering majors,such as the weakness of students'mechanical knowledge reserve,the difficulty of understanding the preparation principle and process,the shortage of experimental equipment,and the shortage of experimental sites,the virtual simulation technology was introduced into mixed teaching of courses to explore effective ways to improve teaching quality,combined with the advantages of visual,safe,and interactive virtual simulation technology.Taking food engineering as an example,this paper first expounded the application of virtual simulation technology in the mixed teaching of food engineering.Secondly,the idea scheme of the application of virtual simulation technology in food engineering specialty was designed.Thirdly,beer brewing was taken as an example to explain in detail the application process of virtual simulation technology.Finally,the application effectiveness of virtual simulation technology and consider improvement measures for future learning was analyzed.This paper explored the application of virtual simulation technology in the hybrid teaching of food engineering,aiming to stimulate the enthusiasm and innovation of students.Furthermore,it aimed to improve the attractiveness and participation of courses and the quality of teaching and learning.
