Research Progress on the Effects of Storage and Processing Techniques on Sensory Flavor and Functional Characteristics of Pears
Pear not only has significant sensory flavor and nutritional properties,but also has the functions of preventing and treating cardiovascular and cerebrovascular diseases,controlling cholesterol and blood glucose levels.Pear needs to obtain new sales channels through storage and processing technology to improve its sales volume and value due to the large short-term market investment,room temperature storage and other factors.This paper mainly introduced the classification,distribution and characteristics of pear,as well as the analysis of the factors affecting the flavor and functional characteristics of pear,and put forward some suggestions on selecting appropriate storage and processing technology,maintaining its sensory flavor and nutritional characteristics,and paid attention to the preferences of different people for pear products.It also discussed the prospect and direction of pear and its product development.It provided an important reference for the healthy development of pear industry.
