水溶番茄红素粉剂的稳定性及微胶囊制备

摘要
本文简单介绍了番茄红素,采用界面聚合法制备了番茄红素微胶囊并对其稳定性进行了研究.番茄红素微胶囊的热稳定、光稳定和金属离子的稳定性要明显优于番茄红素粉剂;抗坏血酸可提高番茄红素粉剂和微胶囊的稳定性.
Abstract
Lycopene was introduced briefly.Lycopene microcapsule was prepared by interfacial polymerization and stabilities of the ly-copene microcapsule were studied.The results showed that thermal stability,light stability and metal ion stability of lycopene micro-capsule were obviously better than lycopene powder;Ascorbic acid could improve the stability of lycopene powder and microcapsule.
