Study on the Processing Technology of White Mullet Fish Balls
Relying primarily on sensory evaluation as the main index,white mullet was used as the main raw ingredient,and cornstarch,egg white were used as auxiliary materials.Through single-factor test and orthogonal test,the best formula for the production of white mullet fish ball was obtained:the addition amount of white mullet fish meat was 80%,the addition amount of corn starch was 18%,the addition amount of egg white was 3%,salt 2.5%,white granulated sugar 0.5%,ginger powder 1%,cooking wine 2.5%,ice 5%.
