Analysis of the Nutritional Composition and Antioxidant Activity of Rhynchophorus ferrugineus at the Larvae Stage
The nutritional and functional activities of Rhynchophorus ferrugineus larvae were comprehensively evaluated by determining the contents of fundamental nutrients such as amino acids,fatty acids,and trace elements and their antioxidant activities and comparing them with those of other common foods.The results showed that the R.ferrugineus larvae contained 42.73%protein,49.90%fat,and 1.55%ash;the protein contained 17 amino acids,primarily tyrosine(15.86%);the fatty acid composition was dominated by unsaturated fatty acids(58.03%),of which the contents of oleic acid and linoleic acid were 50.52%and 1.21%,respectively,and the n-6:n-3 ratio was 3.23;and the contents of potassium,magnesium,and calcium were relatively high in mineral elements and contained small amounts of manganese,iron,copper and zinc.In addition,the aqueous extract of R.ferrugineus larvae had relatively good scavenging ability for DPPH and hydroxyl radicals,and the alcoholic ex-tract had relatively good chelating ability for ferrous ions.The results of this study provide data and theoretical support for the resource development and utilization of R.ferrugineus larvae.
