Research Progress on the Bioactivity and Extraction of Mushroom Polysaccharides
Mushrooms are widely distributed worldwide,with many edible species and a long history of consumption,and they occupy a crucial position in the dietary structure.Mushroom polysaccharides are important active substances in mush-rooms.Mushroom polysaccharides have various effects,such as antioxidant,antitumor,anti-inflammatory,hypoglycemic,hypolipidemic,immunomodulatory,hepatoprotective,and liver protective effects,as well as regulating intestinal flora and cosmetics.By summarizing the relevant research literature at home and abroad,this review mainly describes the related bio-logical activities and extraction methods of mushroom polysaccharides,as well as the current status of the research on the effects of different extraction methods on polysaccharide activities,and presents the prospects of further research on mush-room polysaccharides,aiming to provide theoretical references for relevant research on mushroom polysaccharides.
