摘要
香芋是中国特色农产品,富含淀粉、蛋白质等营养成分,同时含有丰富的多糖、酚类、生物碱等活性成分,具有强免疫力、降血脂、抑制肿瘤等药理作用.本综述对香芋的有效成分种类、香芋产品开发、香芋废弃物的利用及其他新的应用方向进行系统的梳理,对香芋的加工利用及综合利用方面提出展望,为更好地开发利用香芋资源提供理论参考.
Abstract
Fragrant taro is a characteristic agricultural product in China rich in starch,protein,and other nutrients.Meanwhile,fragrant taro has high polysaccharides,phenol,alkaloid,and other active ingredients,which have many pharmacological ef-fects,such as increasing immunity,decreasing blood lipids,increasing anti-cancer effects,etc.In this paper,the resource de-velopment utilization of fragrant taro,including its effective content and product development,the application methods of fragrant taro and other new application directions,and the preservation and comprehensive utilization of fragrant taro are sys-tematically introduced.Prospects were proposed to provide a theoretical basis for further development and utilization of fra-grant taro.
