Analysis of Volatile Organic Compounds in Different Varieties of Celery at Different Growth Stages
[Objective]This study aims to investigate the patterns of variation and distribution characteris-tics of volatile organic compounds(VOCs)in celery across different varieties and growth stages.[Method]For this study,three celery varieties with different petiole colors—′Teji Baiqinwang′ ′Jinnan Shiqin No.2′ and ′Huangnen Xiqin′—were selected as the experimental materials.The volatile organic compounds in celery were extracted using the headspace solid-phase microextraction(HS-SPME)tech-nique,and gas chromatography-mass spectrometry(GC-MS)was utilized for the determination and com-parative analysis of these VOCs.[Result]The three celery varieties were found to contain a combined to-tal of 161 compounds.Among them,the variety ′Jinnan Shiqin No.2′ exhibited the highest overall content of VOCs.Both the varieties ′Teji Baiqinwang′ and ′Jinnan Shiqin No.2′ displayed the highest levels of VOCs at the mature stage,whereas the variety ′Huangnen Xiqin′ exhibited higher content at the rapid growth stage.These findings indicate variations in the quantities and patterns of VOCs among the three cel-ery varieties at different growth stages.According to the OPLS-DA model,it was determined that(-)-cam-phene,2,4-dimethoxyamphetamine,3-methylheptyl acetate,and(+)-camphene exhibit higher concen-trations in the mature stage of ′Teji Baiqinwang′,the seeding stage and mature stage of ′Jinnan Shiqin No.2′,and the rapid growth stage of ′Huangnen Xiqin′,respectively.These compounds can serve as impor-tant markers for distinguishing between different varieties and growth stages.[Conclusion]In this study,HS-SPME-GC-MS technology was used to clarify the distribution and change rules of VOCs among celery varieties in different growth periods,which will provide a reference for the future utilization of celery with different germplasm resources and for the genetic improvement of aroma quality.
