Pathogenic microbial contamination is an important factor causing quality and safety issues in prefabricated dishes.From raw materials to consumer terminals,microbial contamination may occur at every stage.Therefore,it is necessary to explore the microbial risk points at each stage of prefabricated dishes.In this paper,the potential microbial contamination factors in the production,processing,storage,transportation and consumption of prefabricated dishes raw materials were systematically summarized and the causes of microbial contamination were analyzed.Relevant detection methods were discussed to provide references for the healthy and sustainable development of the prefabricated dishes.
