Effects of Shading on Starch Processing Quality and Nutritional Quality of Sweet Potato Shangshu 19 at Vine-Root Tuber Simultaneous Growth Stage
In this experiment,with Shangshu 19 as test material,three treatments including restoring af-ter shading for 40 days with 70%light transmittance at vine-root tuber simultaneous growth stage(restoring treatment),continuous shading with 70%light transmittance from vine-root tuber simultaneous growth stage to harvest time(shading treatment)and no shading during the whole growth period(CK)were set to study their effects on the dry matter mass,the contents of total starch,soluble protein,soluble sugar,reducing sugar and anthocyanin,and the starch composition,swelling potential,solubility and aging value.The results showed that compared to CK,shading treatment reduced the dry matter mass and total starch content of Shangshu 19 root tubers,and increased the contents of amylopectin and soluble protein,and the starch swelling potential and solubility;the soluble protein content increased with the prolongation of shading time.Shading treatment also decreased the starch aging value and contents of reducing sugars,soluble sugars and anthocyanins of root tu-bers.Short-term shading was favorable for the increase of soluble sugar content of Shangshu 19 root tubers.These results could provide data support for sweet potato cultivation in low-light area.
