Study on the Process and Antioxidant Properties of VE-Zein Nanocapsules
Vitamin E-zein nanocapsules(VE/Zein-NC)were prepared by positive-negative phase coalescence method using vitamin E as the core material,zein as the wall material,alcohol ether glycoside(AEG)as the emulsifying agent,and glycerol(VG)as the coemulsifying agent.The preparation process was optimized by single-factor test using encapsulation efficiency and particle size as indicators,and the antioxidant capacity of the nanocapsules was investigated.The results showed that the optimal preparation process of VE/Zein-NC was 2.5 mg/mL concentration of zein,75%concentration of ethanol,and 1:2 volume ratio of positive and negative phases.The encapsulation efficiency of VE nanocapsules prepared under this condition reached 85.37%±0.46%,and the average particle size of VE/Zein-NC was 305.49 nm,with a polydispersity index of 0.038,which was well dispersed.The nanocapsule has a low water content.The antioxidant capacity could reach 2.47 times of untreated VE after 30 days of storage.
