Preparation,Characterization,and Modification Mechanism Study of Maleic Anhydride Modified Agar
This study explores the modification effects of maleic anhydride(MAH)on agar.By controlling temperature and pH levels,various modified agar samples were prepared.The results show that desulfurization is significant under acidic conditions,while substitution is predominant under alkaline conditions.At high temperatures,the increase in rela-tive molecular weight indicates cross-linking reactions.The structural changes of modified agar were confirmed through technologies such as Fourier transform infrared spectroscopy(FT-IR),nuclear magnetic resonance(NMR),and dynamic light scattering.The physicochemical indicators of modified agar,including gel strength,transparency,viscosity,gelling temperature,and melting temperature,have all been improved.Under conditions of 30 ℃ and pH=9.0,the degree of sub-stitution is the highest at 0.068,under 70 ℃ and pH=3.0,the sulfate content is the lowest at 0.44%.
