高膳食纤维竹笋代餐粉配方优化

摘要
为提高竹笋利用率,满足大健康市场对高膳食纤维快消品的巨大需求,以竹笋粉为主料,用零卡糖代替蔗糖,添加薏仁山药粉、黑芝麻粉和燕麦藜麦片,制作高膳食纤维竹笋代餐粉.根据预试验结果,以感官评分值为评价指标,通过单因素试验确定代餐粉中竹笋粉、零卡糖、薏仁山药粉、黑芝麻粉的适宜添加量,再采用正交试验设计法确定各成分的最优组合.结果表明,高膳食纤维竹笋代餐粉的最佳配方为:零卡糖添加量 14.63%,黑芝麻添加量 14.63%,竹笋粉添加量 24.39%,薏仁山药粉添加量24.39%,燕麦藜麦片添加量21.96%.研发的该款代餐粉具有膳食纤维含量高、热量低的特点,具有良好的市场前景.
Abstract
In order to improve the utilization of bamboo shoots and meet the huge market demand for fast-moving consumer goods containing high dietary fiber,bamboo shoot based meal replacement powder with high dietary fiber is prepared,in which bamboo shoot powder is the main ingredient mixed in with coix seed&yam powder,black sesame powder and oat-quinoa flakes,and zero-calorie sugar is used in replacement of sucrose.According to the pre-experiment results,single factor test is used in combination with the organoleptic evaluation score which is used as the indicator to determine the appropriate amount of addition of bamboo shoot powder,zero-calorie sugar,coix seed&yam powder and black sesame powder and then the orthogonal test is adopted to determine the best formula of various ingredients.The results show that the best formula is zero-calorie sugar 14.63%,black sesame powder 14.63%,bamboo shoot powder 24.39%,coix seed&yam powder 24.39%and oat-quinoa slice 21.96%.This formula of meal replacement powder has a good market prospect with high dietary fiber and low calorie.
