The Nisin/Chitosan/PVA composite films were prepared with polyvinyl alcohol(PVA)as the base material,chitosan and Nisin with different mass ratios as the antibacterial agent by solution mixing and casting method.Then the properties of the composite films were studied,and the films were used for pork preservation to evaluate the preservation effect.The results showed there was interaction among chitosan,Nisin and PVA.With the addition of chitosan and Nisin,the optical properties of PVA composite films was reduced,but the effect was small,and the mechanical properties was increased while the water vapor barrier property was decreased.Finally,PVA composite films were applied to the preservation of pork.It was found that the volatile basic nitrogen and pH of meat samples increased slowly,which could delay the deterioration of pork and prolong the shelf life of pork for 2 days.When the mass ratio of Nisin to chitosan was 4∶1,the comprehensive performance of PVA composite films and the preservation effect of pork were the best.
