Compared with inorganic selenium,organic selenium and nano-selenium have the advantages of low toxicity,high biological activity and strong antioxidant activity.Probiotic yeast based on Saccharomyces cerevisiae can be used as baking,brewing,feed additives and so on.Selenium rich yeast developed by using yeast and selenium can be used as nutritional fortifier for animals,which has a high utilization rate,can solve the problem of selenium deficiency in animals and improve the immune function of animals.Therefore,selenium-rich yeast is an ideal source of selenium at present,and can be used as a substitute product in animal production.In the paper,the advantages,species,function and application of selenium-rich yeast in animal production are reviewed,which is expected to further solve the disease problem caused by selenium deficiency in animals.
