Analysis and evaluation of nutrient components in muscle of Yunnan Poropuntius hangchuchieni in Lancang River
The purpose of the experiment was to explore the nutritional components of muscle of artificially propagated Yunnan Poropuntius hangchuchieni.Routine nutrient composition,amino acid composition,fatty acid composition,and mineral elements in muscle of Yunnan Poropuntius hangchuchieni were determined.The results showed that the contents of water,crude protein,crude fat and ash in muscle(fresh sample)were 78.05%,17.16%,2.22%and 1.13%,respectively.Seventeen amino acids were detected.The total amino acid content was(13.98±0.30)%,the essential amino acid content was(5.80±0.05)%,the non-essential amino acid content was(8.18±0.26)%,and the flavor amino acid content was(5.28±0.33)%.The total essential amino acid content was in accordance with the ideal protein standard recommended by FAO/WHO.The first restricted amino acid was methionine+cystine,and the essential amino acid index was 75.77.Fifteen kinds of fatty acids were detected,the relative content of total unsaturated fatty acids was 64.13%,C18 series was the main one,and the content of oleic acid was the highest,which was(43.32±9.43)%.Among the major elements,the content of potassium(K)was the highest,which was(3 516.00±82.73)mg/kg,and the content of magnesium(Mg)was the lowest,which was(319.04±15.58)mg/kg.Among the trace elements,the content of iron(Fe)was the highest,which was(18.35±6.28)mg/kg,and the content of manganese(Mn)was the lowest,which was(0.12±0.02)mg/kg.The study indicates that Yunnan Poropuntius hangchuchieni is a kind of dietary fish with rich amino acids,fatty acids and mineral elements and balanced nutrition,and it has a high development and application prospect as a high oleic acid diet.
