The aim of this experiment was to determine and compare the egg quality and nutritional composition of Daozhou grey goose and Lion-head goose.A total of 80 week-old Daozhou grey goose,Lion-head goose,60 female geese and 12 male geese were selected.Each breed was randomly divided into 12 replicates,with one male goose and five female geese per replicate.Under the same diet and management mode,60 goose eggs were collected for four weeks to detect and analyze the related indexes of egg quality.The results showed that the yolk ratio of Daozhou grey goose was significantly higher than that of Lion-head goose(P<0.05).Water content in eggs of Daozhou grey goose was significantly lower than that of Lion-head goose(P<0.05).The crude fat content was significantly higher than that of Lion-head goose(P<0.05).There were no significant differences in amino acid indexes between the two geese eggs(P>0.05),and the concentrations of glutamic acid,aspartic acid and leucine were abundant.The stearic acid content in Daozhou grey goose eggs was significantly lower than that in Lion-head goose eggs(P<0.05),while the myric acid,palmitoleic acid,linoleic acid,α-linolenic acid,eicosatrienoic acid,arachidonic acid and docosahexaenoic acid,the total amount of unsaturated fatty acid and the ratio of unsaturated fatty acid to saturated fatty acid were significantly higher than those in Lion-head goose eggs(P<0.05).The results show that the quality and nutritional composition of Daozhou grey goose eggs are better,which have the potential to be used as high-quality and characteristic poultry product resources.
