摘要

试验旨在探究饲粮中添加不同水平葵花盘粉对青年鸡屠宰性能及肉品质的影响.选取60日龄的农大5号鸡640只,随机分为4组,每组4个重复,每个重复40只.对照组饲喂基础饲粮,试验组饲喂含有1%(1%组)、2%(2%组)、3%(3%组)葵花盘粉的饲粮.预试期15 d,正式试验期30d.结果表明:与对照组相比,1%组肌肉的pH45min值、蛋白质、脂肪含量显著提高(P<0.05),2%组肌肉中蛋白质含量显著提高(P<0.05).1%组肌肉中必需氨基酸、呈味氨基酸(谷氨酸、丙氨酸、甘氨酸)、牛磺酸、5-羟基色胺含量显著提高(P<0.05),2%组肌肉中亮氨酸、缬氨酸、苏氨酸、异亮氨酸含量显著提高(P<0.05),3%组肌肉中谷氨酸、赖氨酸、苏氨酸、异亮氨酸、5-羟基色胺含量显著提高(P<0.05).研究表明,饲粮中添加葵花盘粉可以通过提高青年鸡肌肉中蛋白质、脂肪、必需氨基酸、呈味氨基酸含量改善肉品质,且添加1%葵花盘粉的效果较佳.

Abstract

This experiment aimed to investigate the effects of adding different levels of sunflower disc powder to the diet on the slaughtering performance and meat quality of growing chickens.A total of 640 ND5 chickens at 60 days of age were selected and randomly divided into four groups,with four replicates per group and 40 chickens per replicate.The control group was fed a basal diet,while the experimental groups were fed the diet containing 1%(1%group),2%(2%group),and 3%(3%group)sunflower disc powder,respectively.The preliminary trial period was 15 days,and the formal trial period was 30 days.The results showed that compared with the control group,the pH45 min value,protein and fat concentrations in muscle of 1%group were significantly increased(P<0.05),and the protein content in muscle of 2%group was significantly increased(P<0.05).The concentrations of essential amino acids,umami amino acids(glutamic acid,alanine and glycine),taurine,and 5-hydroxytryptamine in muscle of 1%group were significantly increased(P<0.05),and the concentrations of leucine,valine,threonine,and isoleucine in muscle of 2%group were significantly increased(P<0.05).The concentrations of glutamic acid,lysine,threonine,isoleucine,and 5-hydroxytryptamine in muscle of 3%group were significantly increased(P<0.05).The study indicates that adding sunflower disc powder in diet can improve the meat quality of growing chickens by increasing the concentrations of protein,fat,essential amino acids and umami amino acids in muscle,and the effect of adding 1%sunflower powder is better.
