Acidic mammalian chitinase is one of the most common and abundant active proteins in edible bird's nest.It is a common chitinase in mammals and can maintain its activity and hydrolyze chitin under acidic environment.Acidic mammalian chitinase is mainly expressed in human respiratory system and digestive system.It plays a regulatory role in a variety of pathological mechanisms and immune inflammation.This paper reviews the physicochemical properties and functions of acidic mammalian chitinase,including its multiple functions and related mechanisms in various systems and organs of the human body,in order to explore its impact on human health and disease.
