Evaluation of Nutrient Quality and Composition in the Muscle of Triplophysa venusta
Triplophysa venusta is a small to medium-size fish species,belonging to Triplophysa,Cobitidae and Cyp-riniformes and primarily distributed in the Yanggongjiang of Jinsha River basin.In this study,the nutritional com-ponents and nutritive quality in the muscle of T.venusta was tested and analyzed using routine methods to provide reference for the artificial culture of T.venusta and generate data for a related study of compound feed.Wild T.ve-nusta specimens were collected from Heqing County,Yunnan Province.The muscle tissue of thirty individuals with average body length of (8.00 ±1.16)cm and body weight of (6.27 ±3.19)g was sampled and analyzed for mois-ture,crude protein,crude fat,crude ash,macro and trace elements,amino acids and fatty acids.Moisture,crude protein,crude fat and crude ash of fresh muscle tissue were 70.92%,24.10%,3.73%and 1.25%,respective-ly.Eighteen amino acids were detected in the muscle,accounting for 13.64%of the muscle,including 8 essential amino acids (5.98%)and 10 non-essential amino acids (7.66%).The essential amino acids index (EAAI)was 48.1 1 and tryptophan (TRP)was the least abundant.In dry samples,the content of delicious amino acids was 30.94% of the total amino acid content.Sixteen fatty acids were detected,6 saturated fatty acids,3 monounsat-urated fatty acids and 7 polyunsaturated fatty acids,accounting for,respectively,(35.79 ±0.13)%,(29.87 ± 0.06)% and (32.11 ±0.14)%of the total fatty acid content.The content of EPA and DHA was 11.68%,higher than in some other fish species.The trace elements,essential for metabolism,growth and development,were abun-dant.The phosphorus (P)content was the highest among the macro elements (7.87 ±0.40 mg/g)and the magne-sium (Mg)content was the highest (0.148 ±0.02 mg/g)among the trace elements.This research indicates that T.venusta has high nutritional value and good taste,is highly edible and healthy.
