摘要

硒是人体必需的微量元素,其中有机硒具有抗氧化、提高免疫力等重要生理功能.本文检测了梭子蟹中硒的形态,并针对不同温度下梭子蟹中不同形态硒的降解规律进行了分析研究.结果表明,梭子蟹中主要含有五种形态的硒元素,其含量由高到低依次为硒代蛋氨酸(SeMet)、甲基-硒代半胱氨酸(MeSeCys)、硒代胱氨酸(SeCys2)、硒酸根[Se(Ⅵ)]和亚硒酸根[Se(Ⅳ)].在常温和 4℃的条件下,梭子蟹中的无机硒降解速率相对较快,有机硒降解相对较慢.当梭子蟹处于低温环境下,有利于减缓硒的降解速率,稳定梭子蟹的营养和感官质量.这对于维持和保护梭子蟹的品质具有一定的指导意义.

Abstract

Selenium is an essential trace element for the human body,and organic selenium possesses important physiological functions such as antioxidation and immune enhancement.This study detecte the selenium forms in pike crab and conducte an analysis of the degradation regularity of different selenium forms in the pike crab at different temperatures.Results indicate that,pike crab contains five forms of selenium elements,whose content from high to low are selenomethionine(SeMet),methyl-selenocysteine(MeSeCys),selenocystine(SeCys2),selenite[Se(VI)]and selenite[Se(IV)].The rate of degradation of inorganic selenium in pike is relatively fast and that of organic selenium is relatively slow at room temperature and 4℃.It is beneficial to slow down the degradation rate of selenium and stabilize the nutritional and sensory quality of pike crabs at low temperature environment.These data provide certain guiding significance for maintaining and protecting the quality of pike crabs.
