Analysis of pathogenic characteristics of Yersinia enterocolitica in commercial raw meat and frozen fish mince products in Liaoning Province
This study was to investigate the contamination,biotyping,serotyping,virulence genes,antibiotic resistance and mass spectrometry characteristics of Yersinia enterocolitica in chicken,beef,pork and frozen surimi products sold in Liaoning Province.During the period from 2018 to 2021,a variety of meat samples,including 250 chicken,320 pork,178 beef and 128 frozen surimi products,were collected from supermarkets and farmers'markets in Liaoning Province to evaluate the level of Yersinia enterocolitica.The isolated strains were subjected to biological typing,serotyping,virulence gene detection,drug sensitivity test and mass spectrometry analysis.As a result,totally 30 strains of Yersinia enterocolitica were detected from the 876 samples collected,with a detection rate of 3.42%(30/876).Within different meat categories,the detection rates in chicken,beef,pork and frozen surimi products were found to be 7.20%(18/250),4.49%(8/178),0.94%(3/320),and 0.78%(1/128),respectively.All 30 isolated strains showed the same 1A biotypes.Regarding their serotypes,27 strains were with O:5 and 3 strains with O:8.A total of 5 virulence genes were detected.Four of them(ail,ystA,yadA,and virF)turned out to be negative,while the positive ystB gene were observed in 15 strains.Among the 30 strains of Yersinia enterocolitica isolated,4 strains(13.33%)were resistant to 4 drugs,and 1 strain(3.33%)was resistant to 6 drugs.The overall drug resistance of 30 strains was high towards cefazolin,ampicillin and cefotaxime,with the resistance rates as 93.33%,66.67%and 53.33%,respectively.In addition,all 30 isolated strains were 100%sensitive to ceftazidime,chloramphenicol and gentamicin.The mass spectrometry analysis for the 30 strains of Yersinia enterocolitica led to the distribution into 3 clusters,and the isolates carrying the ystB gene were distributed in the third cluster.Overall,Yersinia enterocolitica is a potential risk factor for foodborne diseases based on the analysis of chicken,beef,pork and frozen surimi products sold in Liaoning Province,with high resistance rates to cefazolin,ampicillin and cefotaxime.
