摘要

以"重金属在土壤基质—食用菌体—人体中的迁移及利用"科研素材为例,采集云南省不同地区食用菌及其根际土壤为代表性样本,基于环境污染与食品安全相关理论知识,探究菌体、根际土壤及人体系统中镉的迁移规律,建立具有设计性和研究性的综合实验.采用"预习准备—实验过程—分析总结—拓展思考"的教学方式,开展"基础—进阶—高阶"渐进式教学过程,层层递进难度系数,形成一种具有专业特色的综合实验教学模式,增强学生对环境和食品学科交叉融合知识的理解,提高学生的实践操作能力和创新能力,培养具有社会责任感的高素质人才.

Abstract

Taking"the migration and utilization of cadmium in soil matrix,edible mushroom and human body"as an example,the representative samples of edible mushroom and its rhizosphere soil were collected from different regions of Yunnan Province.Based on the theoretical content related to environmental pollution and food safety,the basic composition and heavy metal content of the samples were analyzed.The migration rule of cadmium in the mushroom,rhizosphere soil and human body system was explored to increase the design and research of experiments.And the teaching model with"preparation-experimental process-analysis and summary-expanding thinking"was adopted,the teaching process with"basic-advanced-high order"was carried out.The difficulty coefficient of experiment was increased,and comprehensive experiment with academic characteristics was formed.The formation of comprehensive experiment was beneficial to consolidate students'understanding of interdisciplinary integration of knowledge of environment and food disciplines,improve students'practical operation ability and innovation ability,and cultivate high-quality talents with social responsibility.
