Research progress on functional components and pharmacological effects of buckwheat
Buckwheat is a medicinal and edible plant with rich nutrients,functional substances and various pharmacological effects.It has extensive development and utilization value in the field of food processing and medicine.Its nutrients include starch,protein,fat,dietary fiber,minerals and vitamins.Buckwheat not only contains high protein,but also contains a variety of trace elements,such as iron,zinc,copper,manganese,etc.,which is beneficial to human health.The chemical constituents of buckwheat mainly include flavonoids,phenols,steroids,terpenoids,glycosides,organic acids and other compounds.The pharmacological effects of buckwheat mainly include hypoglycemic,lipid-lowering,anti-oxidation,anti-inflammatory,anti-tumor,and prevention of cardiovascular diseases.Buckwheat can be made into a variety of food which is rich in nutrition and has unique taste,and thus has broader development and utilization value.In this paper,the functional components and pharmacological effects of buckwheat were summarized,in order to provide reference for the development and utilization of buckwheat resources.
