RESEARCH PROGRESS IN HEALTH CARE FUNCTION AND FOOD APPLICATION OF RESISTANT STARCH
Adiposity, diabetes mellitus, and various cardio-cerebrovascular diseases resulted from high levels of blood sugar, blood fat, and serum cholesterol, are seriously harmful to people's health. Resistant starch (RS) is a new kind of dietary fibre concept arising in recent years. Many health care functions of RS have been discovered. RS can depress the postprandial blood sugar level and blood fat, which is beneficial for preventing type H diabetes and adiposity. It can abate cardiovascular or cerebrovascular diseases such as hypertension and cardiopathy. It also improves the intestinal environment and prevents colorectal cancer. In addition, RS promotes the absorbing of mine ionic like Ca2+ and Mg2+, leading to human nutrient balance. This paper reviewed the research progress of RS in health care area, and discussed the industrialization prospect of functional food based on RS.
