温度和pH对烟酰胺生成烟酸的影响

以质量分数 5%烟酰胺与 5 种功效原料[抗坏血酸(VC)、3-邻-乙基抗坏血酸(VCE)、传明酸、肌肽和乙酰壳糖胺(NAG)]分别复配的水溶液为研究对象,考察不同pH和温度条件下,对烟酰胺生成烟酸的影响.结果表明,烟酰胺缓冲体系,在高温45℃及pH<5.0条件下,促进了烟酸产生;在复配VC和VCE的条件下,促进了烟酸产生;在复配传明酸、肌肽和NAG的条件下,抑制了烟酸产生.
Formation of Niacin from Niacinamide Based on Different Temperatures and pH
Effects of different pH and temperature conditions on the formation of niacin from nicotinamide in aqueous solutions composed of 5%niacinamide and 5 functional raw materials,including ascorbic acid(VC),3-o-ethylascorbic acid(VCE),tranexamic acid,carnosine,and acetylchitosan(NAG)were investigated in this paper.The results showed that,the formation of niacin was promoted at high temperature of 45℃and pH<5.0 in the niacinamide buffer system;the formation of niacin was promoted by compounding VC and VCE,respectively;it was inhibited by compounding tranexamic acid,carnosine,and NAG,respectively.
