柑橘精深加工可以从榨汁后的柑橘皮渣中获取精油、果胶、类黄酮、色素等风味或功能性成分,以期提高整个产业的附加值.概述了世界各国柑橘尤其是橙的最新情况,介绍了中国柑橘种植及大型加工企业布局,汇总了柑橘来源天然产物的提取方法.最后在对比传统和创新的柑橘深加工工艺及产品设计的基础上,展望了未来柑橘产业的发展趋势.
Abstract
The aromatic and functional components of citrus fruits,such as essential oils,pectin,flavonoids,natural color,may be obtained from the citrus peel residues after juiced by fine processing technology,which increased the added value of the whole industry as well.This review outlined the latest status of production of citrus,especially oranges,in various countries around the world,and introduced the layout of citrus cultivation and large-scale processing enterprises in China.The categories of bioactive components contained in citrus fruits and their innovative extraction methods were summarized.Finally,the future development trends of the citrus industry were outlooked,based on the comparing between traditional and innovative processing technology and product design.
