Through the investigation and analysis on the development status of flavors and fragrances industry and the research progress of natural flavor,how science and technology could promote the high-quality development of the industry were explored in this paper.VOSViewer,incoPat and other analytical tools were used to search and analyse the literature and patents related to fragrance and flavor,then 2 775 Chinese and English literatures were searched,and 10 986 valid patents were obtained.The keywords of"analysis","production","synthesis"and"essential oil"were high-frequency keywords in relevant literature,which were the hot research areas of natural flavors and fragrances.Yunnan natural flavor had advantages and featured tobacco patents as a special theme.The research results show that natural flavors will continue to be a research hotspot in the future,and their application fields show a diversified trend.
