Simultaneous Determination of Lactic Acid,Fumaric Acid and Hydroxymethyl Furfural in Concentrated Apple Juice by Liquid Chromatography
A HPLC method for simultaneous determination of lactic acid,fumaric acid and hydroxymethyl furfural in fruit juice was developed.The chromatography was performed on an YMC-pack ODS-AQ column(4.6mm×250mm,5μm)with mobile phase consisting of 0.03%phosphoric acid and 2%methanol solution.The flow rate was 0.4mL/min~0.8mL/min and the column temperature was 35℃.The results showed that lactic acid and fumaric acid were effectively separated at 210nm and hydroxymethyl furfural at 280nm,and the correlation coefficients were 0.99951、0.99939 and 0.99999,respectively.The recoveries were 95.97%、98.54%and 96.50%,respectively.The method has been successfully used for simultaneous quantitative determination of lactic acid,fumaric acid and hydroxymethyl furfural in concentrated apple juice.
