22种石竹科栽培种花卉营养价值及抗氧化能力综合分析

Comprehensive analysis on the nutritional value and the antioxidant capacity of 22 Caryophyllaceae cultivars'flowers

对 22 种栽培种石竹科花卉营养价值和抗氧化能力的差异进行了研究.采用相关性、聚类和主成分分析对石竹科花卉品质进行了综合评价.实验结果表明,22种石竹科栽培种花卉具有较高的营养价值和较强的抗氧化能力,其维生素C、总黄酮含量与铁离子抗氧化能力(ferric reducing antioxidant power,FRAP)、1,1-二苯基-2-三硝基苯肼(1,1-diphenyl-2-pyridylhydrazine,DPPH)自由基清除率呈显著正相关.聚类分析结果显示,13 种品质指标可归为 3 类,第 1 类以水分和蛋白质含量占优,第 2类以维生素C、总黄酮、还原糖和灰分含量以及FRAP、DPPH清除率占优,其余指标均归为第 3 类.主成分综合评价模型显示,样品C18 综合品质最优.总体来看,石竹科花卉具有一定的食用价值和抗氧化能力,是开发新型功能性食品和天然抗氧化剂的良好植物资源.
The differences in nutritional values and antioxidant capacities of 22 Caryophyllaceae cultivars'flowers were performed in this study.Correlation analysis,cluster analysis and principal component analysis were used to comprehensively evaluate the quality of these flowers.The results showed that 22 Caryophyllaceae cultivars'flowers had higher nutritional value and antioxidant capacity,and the contents of vitamin C and total flavonoids were significantly positive correlated with ferric reducing antioxidant power(FRAP)and 1,1-diphenyl-2-trinitrophenylhydrazine(DPPH)free radical scavenging rates.Cluster analysis result showed that the 13 quality indicators measured in the study were classified into three categories.The first category mainly included water and protein contents,and the second category contained the contents of vitamin C,total flavonoids,reducing sugars and ash contents,as well as FRAP and DPPH scavenging rates.The remain indices were categorized into the third category.The comprehensive evaluation model of principal components showed that sample C18 had the best performance.Taken together,Caryophyllaceae cultivars'flowers have certain nutritional value and antioxidant capacity,and are good plant resources for the development of new functional foods and natural antioxidants products.
