国内外酒糟研究现状及发展态势

酒糟是轻工业白酒酿造的主要废弃物,含有大量有机物,资源化利用前景广阔,在全球范围内得到广泛的研究。基于国内外文献数据库检索的10078 篇酒糟研究文献,利用文献计量学定量分析国内外酒糟研究状况。结果表明:国内酒糟研究范围广,涉及64 个研究领域,集中在农业、食品科技、化学、轻工业、环境科学与资源利用。2000~2022 年,国内酒糟研究论文发表数量波动较小,而国外波动较大。在知网CNKI中共检索到8725 位作者,在web of science中共检索到9547 位作者,涉及到的国内前40 个酒糟研究机构主要集中在我国南方,且集中在四川,在WOS文献数据库中共检索到2059 个机构,其中发表文献超过100 篇的机构有17 家。美国论文数量最多,共计2589 篇,其次是加拿大,共计529 篇,再次是中国,共计499 篇。从国内外开展酒糟研究现状和发展趋势来看,亟需加强酒糟高品质的资源化利用水平、拓宽资源化路径等方面研究,不断拓展交流与合作,促进酒糟资源化利用。
Current Status and Development Trends of Research on Distillers'Grains at Home and Abroad
Distillers'grains are the main waste of light industrial Baijiu production,which contains a large amount of organic matter and has broad prospects for resource utilization and has been extensively studied worldwide.This article was based on 10078 research articles on distillers'grains retrieved from domestic and foreign literature databases,and used bibliometrics to quantitatively analyze the research status of distillers'grains at home and abroad.The results showed that the research scope of domestic distillers'grains was wide,involving 64 research fields,concentrated in agriculture,food technology,chemistry,light industry,environmental science and resource utilization.From 2000 to 2022,the number of published research papers on distillers'grains in china fluctuated slightly,while there was a significant fluctuation abroad.A total of 8725 authors were retrieved from CNKI,and 9547 authors were retrieved from Web of Science.The top 40 domestic distillers'grains research institutions involved were mainly concentrated in southern China,and were concentrated in Sichuan.A total of 2059 institutions were re-trieved from the WOS literature database,among which 17 institutions had published more than 100 articles.The United States had the highest number of papers,with a total of 2589,followed by Canada with a total of 529 papers,and China with a total of 499 papers.From the current sit-uation and development trends of research on distillers'grains both domestically and internationally,it was urgent to strengthen the level of high-quality resource utilization of distillers'grains,broaden resource utilization paths,and continuously expand exchanges and cooperation to pro-mote the resource utilization of distillers'grains.
