明胶/花青素智能显色食品包装膜的研究

近年来pH/氨响应型天然染料是智能包装材料发展研究的热点.以明胶和花青素为原料,利用流延法制备明胶/花青素智能显色包装复合膜.利用扫描电镜观察明胶/花青素复合膜的微观形貌,DPPH法测定明胶/花青素复合膜的抗氧化性能,利用紫外分光光度计测定明胶/花青素复合膜的透光率.结果表明,花青素的加入增大了明胶/花青素复合膜的表面粗糙度,提高了该复合膜的抗氧化性能,但降低了复合膜的透光率.另外,该智能显色食品包装膜能够有效监测猪肉和酸奶的新鲜度.
Study on Gelatin/Anthocyanin Intelligent Coloring Food Packaging Film
In recent years,pH/ammonia responsive natural dyes have become a hot research topic in the development of intelligent packaging materials.This research uses gelatin and anthocyanins as raw materials to prepare gelatin/anthocyanin intelligent color packaging composite films by casting.The microstructure,antioxidant properties and transmittance of gelatin/anthocyanin composite are measured using scanning electron microscopy,DPPH method and UV spectrophotometer,respectively.The results showed that the addition of anthocyanins increased the surface roughness of the gelatin/anthocyanin composite film and improved its antioxidant performance,but reduced the transmittance of the composite film.In addition,the intelligent color food packaging film can effectively monitor the freshness of pork and yogurt.
