基于智能感官评价的功能性宠物营养剂开发

传统的人工感官评价在宠物食品和营养品的开发中作用有限,尤其在滋味和气味上无法判断产品最终能否受宠物欢迎.本研究在宠物营养剂开发中引入智能感官技术,采用电子鼻和电子舌采集的传感器信号作为评价产品风味接受程度的客观依据.结合单因素和正交实验研究结果,产品配方中畜禽肉、绿唇贻贝用量之比13.65∶1,功能性纳米乳液用量15.28%,复合乳化剂添加量1.57%时,功能性宠物营养剂的感官评分最高,与目标产品的风味最为接近.
Traditional artificial sensory evaluation plays a limited role in the development of pet food and nutrition products,especially in the taste and smell can not judge whether the product will be welcomed by pets.In this study,intelligent sensory technology was introduced into the development of pet nutrition,and the sensor signals collected by electronic nose and electronic tongue were used as the objective basis to evaluate the acceptability of product flavor.Combined with the results of single factor and orthogonal experiment,the sensory score of functional pet nutrition was the highest when the ratio of livestock meat and green lip mussels,the amount of functional nano emulsion 15.28%,and the amount of compound emulsifier 1.57%were added,and the flavor of functional pet nutrition was the closest to the target product.
