新疆褐牛(肉用类型)对标安格斯牛选育研究进展

为研究新疆褐牛(肉用类型)对标安格斯牛在生长发育、肉质和抗逆性等多方面指标的选育进展情况,以相同月龄阶段的新疆褐牛(肉用类型)阉牛和安格斯牛阉牛为研究对象,通过对比其体尺指标、胴体性能、肉质分析指标以及质构参数等指标相关数据,分析二者差异。结果显示,30~36月龄阶段的新疆褐牛(肉用类型)与安格斯牛的体重、十字部高、体斜长指标存在显著性差异(P<0。05),管围指标存在极显著差异(P<0。01);新疆褐牛(肉用类型)的背膘厚度极显著低于安格斯牛(P<0。01),屠宰率、眼肌面积显著高于安格斯牛(P<0。05);2个品种阉牛的质构参数无显著差异(P>0。05),说明二者牛肉适口性相差不大。新疆褐牛(肉用类型)对标安格斯牛的选育工作卓有成效。
Research Progress on the Breeding of Xinjiang Brown Cattle(Meat Type)with Angus Cattle as the Target
In order to study the breeding progress of Xinjiang brown cattle(meat type)in terms of growth and development,meat quality and stress resistance with Angus cattle as the target.Xinjiang brown cattle(meat type)and Angus cattle steers at the same age were taken as the research objects,and analyzed the differences by comparing the body size index,carcass performance,meat quality analysis index and texture parameters.The results showed that there were significant differences in body weight,hip height and body length between Xinjiang brown cattle(meat type)steers and Angus cattle steers at the age of 30~36 months(P<0.05),there were extremely significant differences in circumference of cannon bone index(P<0.01),the backfat thickness of Xinjiang brown cattle(meat type)was significantly lower than that of Angus cattle(P<0.01),the slaughter rate and ribeye area were significantly higher than those of Angus cattle(P<0.05),and there was no significant difference in the texture parameters of the two breeds(P>0.05),indicating that there was little difference in the palatability of beef between Xinjiang brown cattle(meat type)and Angus cattle steers.The results showed that the breeding of Xinjiang brown cattle(meat type)with Angus cattle as the target was effective.
